Ravioli with bacon, peas and courgette

This delicious ravioli with bacon, peas and courgette can be adapted using a variety of filled pastas, giving a wide range of possible flavours

The combination of fresh lemon zest, parsley and parmesan with rich ravioli and green vegetables make a delicious midweek meal
Preparation time: five minutes
Cooking time: 10 minutes
Per serving: 497 cals/23g fat
Serves: one, although this recipe can easily be doubled to make a simple supper for two.

Ingredients


*1 tbsp olive oil
*1 rasher bacon, chopped
*1 clove garlic, crushed
*A pinch of dried chilli
*50g frozen peas
*1 small courgette, grated
*200g ravioli
*1 tbsp lemon zest
*1 tbsp flat-leaf parsley
*1-2 tbsp freshly grated Parmesan cheese

Method


1. Bring a large saucepan of salted water to the boil. Cook the ravioli, following the instructions on the packet, then drain well.

2. Meanwhile, pour the oil in a frying pan over a medium heat. Add the bacon, garlic and chilli and cook, stirring, for about four minutes.

3. Add the peas and grated courgette and cook for three minutes, or until soft.

4. Add the drained ravioli to the frying pan, stirring gently to combine the ingredients. Serve immediately, sprinkled with lemon zest, parsley and parmesan.
